Carrot tops were one of those 'entertain the kids' science experiments; I've done spring onions for continuous small use before.
I note though that their list of 'other things you can start in water and transfer to soil' includes avocado, which is a rather large tree that may or may not ever fruit. It also has pineapple, which I've tried and never succeeded on. Potatoes and sweet potatoes I've always put straight into the ground. But I've seen lots of people do sweet potato vines in glasses on the window sill.
